THE MANGO-CARDAMOM ORBS
(Our Play on Romanian Papanasi with a Tropical Heart)
Ingredients: 300g Ricotta cheese, 200g Flour, 1 Egg, 50g Sugar, 1 tsp Cardamom, 1 tsp Vanilla extract, 100g Mango pulp, 100ml Sour cream, 1 tbsp Honey...
Ingredients
- 300g Ricotta cheese
- 200g Flour
- 1 Egg
- 50g Sugar
- 1 tsp Cardamom
- 1 tsp Vanilla extract
- 100g Mango pulp
- 100ml Sour cream
- 1 tbsp Honey
Cooking Method
- The Build Knead cheese, flour, egg, and sugar into a dough; fold in half the cardamom.
- The Bloom Whisk remaining cardamom into the mango pulp with a 5ml splash of warm water to release the perfume.
- The Scorch Form dough into donuts; deep fry until rock-hard golden and charred outside.
- The Marriage Top the hot orbs with cold sour cream and the spiced mango silk.
- The Final Flourish Finish with a final dust of raw cardamom and fresh raw mint.
