THE MALABAR SILK-FLOW
(Our Play on Prawn Moilee)
Ingredients: 400g King Prawns (cleaned), 10 Curry leaves, 1 tbsp Ginger-garlic paste, 2 Green chilies (slit), 1 tsp Turmeric, 1 tsp Black pepper (crushed), 400ml Coconut milk, 1 large onion (sliced into petals)...
Ingredients
- 400g King Prawns (cleaned)
- 10 Curry leaves
- 1 tbsp Ginger-garlic paste
- 2 Green chilies (slit)
- 1 tsp Turmeric
- 1 tsp Black pepper (crushed)
- 400ml Coconut milk
- 1 large onion (sliced into petals)
Cooking Method
- The Foundation Sauté onions, ginger-garlic, and curry leaves in oil until the onion petals are soft but not brown.
- The Bloom Add turmeric and pepper with a splash of water; do not let it darken.
- The Swell Pour in the coconut milk; simmer gently for 5 minutes.
- The Marriage Drop in the prawns; simmer for 3 minutes until they turn pink.
- The Final Flourish Finish with a squeeze of fresh lime and serve over gold-standard grains.
