THE LIME-STUNG STEAK DUST
(Our Play on Thai Beef Salad / Nam Tok)
Ingredients: 400g Sirloin steak (grilled and sliced), 3 tbsp Lime juice, 2 tbsp Fish sauce, 1 tsp Chili flakes, 2 Red onions (thinly sliced), 20g Fresh mint, 20g Fresh coriander, 1 tbsp Toasted rice powder...
Ingredients
- 400g Sirloin steak (grilled and sliced)
- 3 tbsp Lime juice
- 2 tbsp Fish sauce
- 1 tsp Chili flakes
- 2 Red onions (thinly sliced)
- 20g Fresh mint
- 20g Fresh coriander
- 1 tbsp Toasted rice powder
Cooking Method
- The Scorch Sear steak on maximum heat until charred outside but pink inside; rest then slice.
- The Bloom In a bowl, whisk lime juice, fish sauce, and chili with a 15ml splash of water.
- The Marriage Toss the warm steak slices, onions, and herbs into the dressing until well combined.
- The Final Flourish Scatter the toasted rice powder over the top right before serving for a nutty crunch.
