THE LIME-STUNG POTATO-CRUNCH
(Our Play on Papas a la Mexicana)
Ingredients: 600g Potatoes (cubed), 1 Onion (diced), 2 Tomatoes (diced), 1 Jalapeño (minced), 1 tsp Cumin, 1 tsp Garlic powder, 1 tsp Salt, 2 tbsp Butter, 1 tbsp Lime juice...

- 600g Potatoes (cubed)
- 1 Onion (diced)
- 2 Tomatoes (diced)
- 1 Jalapeño (minced)
- 1 tsp Cumin
- 1 tsp Garlic powder
- 1 tsp Salt
- 2 tbsp Butter
- 1 tbsp Lime juice
Cooking Method
- The Scorch Fry potatoes in oil until 70% cooked and charred at the edges.
- The Architect Add onion, tomato, and jalapeño; sauté in the starch until soft.
- The Bloom Add spices with a 20ml splash of water; the steam will release the cumin perfume.
- The Marriage Add butter and lime juice; toss for 3 minutes until the liquid vanishes and the spuds are crispy.
- The Final Flourish Top with a massive hit of raw fresh coriander.
