THE LIME-STUNG CRUNCH-BREAD
(Our Play on Banh Mi Filling - Spiced Pork)

Ingredients
- 400g Pork mince
- 1 tbsp Garlic paste
- 1 tbsp Ginger paste
- 1 tbsp Lemongrass (minced)
- 1 tbsp Fish sauce
- 1 tbsp Soy sauce
- 1 tsp Sugar
- Pickled carrots
- Cucumber
- Fresh Coriander
Cooking Method
- The Scorch Fry pork mince in a dry pan on high heat until browned and crispy clumps form.
- The Architect Add the aromatics; sauté until the garlic is golden.
- The Bloom Add the silk ingredients and a 20ml splash of water; stir-fry until the liquid is absorbed.
- The Marriage The meat should be dry, dark, and intensely fragrant.
- The Finish Stuff into a toasted baguette with a massive hit of raw pickled veg and coriander.
