THE LEMONGRASS REEF-MIST
(Our Play on Balkan Fish Soup with Thai Aromatics)
Ingredients: 500g White fish (chunks), 2 Leeks (sliced), 20g Fresh Ginger (grated), 1 Lemongrass stalk (bruised), 1 tsp White pepper, 1 tsp Turmeric, 1 tsp Salt, 1L Fish stock, 2 Lemons (juiced), 2 Egg yolks...
Ingredients
- 500g White fish (chunks)
- 2 Leeks (sliced)
- 20g Fresh Ginger (grated)
- 1 Lemongrass stalk (bruised)
- 1 tsp White pepper
- 1 tsp Turmeric
- 1 tsp Salt
- 1L Fish stock
- 2 Lemons (juiced)
- 2 Egg yolks
Cooking Method
- The Architect Sauté leeks, ginger, and lemongrass in oil until soft.
- The Bloom Add fish and spices with a 30ml splash of stock; the steam will release the citrus perfume.
- The Swell Add remaining stock; simmer for 15 minutes. Gently poach fish for 5 minutes.
- The Silk Merge Whisk yolks and lemon juice; slowly temper with hot broth then stir back into the pot off the heat until a thick ivory mist forms.
- The Final Flourish Finish with raw fresh coriander and lime zest.
