THE LEMONGRASS HEAT-BEEF
(Our Play on Vietnamese Shaking Beef)

- 400g Beef sirloin (cubed)
- 1 Red onion (petals)
- 2 Lemongrass stalks (minced)
- 2 tbsp Soy sauce
- 1 tbsp Fish sauce
- 1 tbsp Sugar
- 2 cloves Garlic (minced)
- 1 tsp Black pepper
Cooking Method
- The Scorch Sear beef in a white-hot wok in batches for 2 minutes until charred; remove.
- The Architect Sauté onions, lemongrass, and garlic until golden and fragrant.
- The Bloom Add the silk ingredients and pepper with a 20ml splash of water to form a dark glaze.
- The Marriage Toss the beef back in; 'shake' the pan vigorously for 1 minute until coated.
- The Finish Serve over fresh watercress with a squeeze of lime.
