(Our Play on Zucchini with Lemon and Mint)

- 3 Large Zucchini (sliced into coins)
- 2 cloves Garlic (sliced)
- 3 tbsp Olive oil
- 1 tsp Black pepper
- 0.5 tsp Salt
- Handful of fresh Mint
- 1 Lemon (juiced)
Cooking Method
- The Scorch Fry zucchini coins in olive oil on maximum heat until they have dark brown charred spots.
- The Architect Push to the side; sauté garlic until golden and crisp.
- The Bloom Add pepper and a tiny 10ml splash of water to form a fragrant steam.
- The Marriage Toss everything together for 1 minute until the garlic oil coats the veg.
- The Final Flourish Add the lemon juice and a massive hit of raw fresh mint matchsticks.
