Ingredients: 3 Large Zucchini (sliced into coins), 2 cloves Garlic (sliced), 3 tbsp Olive oil, 1 tsp Black pepper, 0.5 tsp Salt, Handful of fresh Mint, 1 Lemon (juiced)...

Ingredients

  • 3 Large Zucchini (sliced into coins)
  • 2 cloves Garlic (sliced)
  • 3 tbsp Olive oil
  • 1 tsp Black pepper
  • 0.5 tsp Salt
  • Handful of fresh Mint
  • 1 Lemon (juiced)

Cooking Method

  1. The Scorch Fry zucchini coins in olive oil on maximum heat until they have dark brown charred spots.
  2. The Architect Push to the side; sauté garlic until golden and crisp.
  3. The Bloom Add pepper and a tiny 10ml splash of water to form a fragrant steam.
  4. The Marriage Toss everything together for 1 minute until the garlic oil coats the veg.
  5. The Final Flourish Add the lemon juice and a massive hit of raw fresh mint matchsticks.
