Ingredients: 300g Arborio rice, 1L Veg stock, 1 Lemon (juiced and zested), 50g Butter, 1 White onion (finely diced), 2 cloves Garlic, 1 tsp White pepper, 1 tsp Salt...

  • 300g Arborio rice
  • 1L Veg stock
  • 1 Lemon (juiced and zested)
  • 50g Butter
  • 1 White onion (finely diced)
  • 2 cloves Garlic
  • 1 tsp White pepper
  • 1 tsp Salt

Cooking Method

  1. The Architect Sauté onion and garlic in 1 tbsp oil until soft and translucent.
  2. The Scorch Add the rice; toast for 2 minutes until the grains are see-through at the edges.
  3. The Bloom Add the lemon zest and pepper with a 50ml splash of hot stock; stir until the oils release.
  4. The Swell Add stock one ladle at a time, stirring until the rice is creamy but firm.
  5. The Final Flourish Stir in the butter, lemon juice, and raw fresh mint for a sharp finish.
