THE LEMON-SILK POULTRY CLUSTERS
(Our Play on Greek Kotopoulo Lemonato)
Ingredients: 4 Chicken thighs (bone-in), 500g Potatoes (cubed), 4 cloves Garlic (smashed), 1 tbsp Dried Oregano, 1 tsp Black pepper, 1 tsp Salt, 100ml Lemon juice, 100ml Chicken stock, 60ml Olive oil...
Ingredients
- 4 Chicken thighs (bone-in)
- 500g Potatoes (cubed)
- 4 cloves Garlic (smashed)
- 1 tbsp Dried Oregano
- 1 tsp Black pepper
- 1 tsp Salt
- 100ml Lemon juice
- 100ml Chicken stock
- 60ml Olive oil
Cooking Method
- The Scorch Fry chicken skin-side down until charred and fat renders; remove.
- The Architect Toss potatoes and garlic in the fat until they have brown spots.
- The Bloom Add oregano and pepper with a 30ml splash of stock; the steam will release the herb oils.
- The Marriage Add lemon juice and remaining stock; return chicken. Cover and simmer for 20 minutes.
- The Final Flourish Finish with a massive hit of raw fresh parsley and extra lemon zest.
