THE LEMON-CHARRED ROOTS
(Our Play on Greek Patates Lemonates)
Ingredients: 1kg Potatoes (thick wedges), 1 tbsp Dried Oregano, 1 tsp Black pepper, 1 tsp Salt, 100ml Lemon juice, 100ml Chicken stock, 100ml Olive oil, 4 cloves Garlic (smashed)...

- 1kg Potatoes (thick wedges)
- 1 tbsp Dried Oregano
- 1 tsp Black pepper
- 1 tsp Salt
- 100ml Lemon juice
- 100ml Chicken stock
- 100ml Olive oil
- 4 cloves Garlic (smashed)
Cooking Method
- The Mix Toss potatoes and garlic with oil and spices in a deep roasting tray.
- The Bloom Whisk lemon juice and stock; pour over the potatoes; add a 10ml splash of water to help the oregano oils penetrate.
- The Scorch Roast at 200°C for 45 minutes, turning once, until the liquid evaporates into a thick silk and the edges are rock-hard charred.
- The Final Flourish Finish with raw lemon zest and a final rain of raw oregano.
