Ingredients: 2 Cod fillets, 2 Leeks (sliced), 50g Butter, 1 tsp White pepper, 1 tsp Dried Tarragon, 100ml Double cream, 1 tbsp Dijon mustard...

Ingredients

  • 2 Cod fillets
  • 2 Leeks (sliced)
  • 50g Butter
  • 1 tsp White pepper
  • 1 tsp Dried Tarragon
  • 100ml Double cream
  • 1 tbsp Dijon mustard

Cooking Method

  1. The Architect Sauté leeks in butter until soft and sweet.
  2. The Bloom Add spices and mustard with a 20ml splash of cream; the hiss will bloom the tarragon.
  3. The Marriage Place cod on the leeks in a dish; pour remaining cream over the top.
  4. The Bake Roast at 200°C for 12 minutes until the cod is flaky and the silk is bubbling.
  5. The Final Flourish Finish with a massive hit of raw fresh chives.
