(Our Play on Vichyssoise / Leek and Potato Soup)

- 2 Potatoes (cubed)
- 50g Butter
- 1 Onion (diced)
- 1 tsp White pepper
- 1 tsp Salt
- 1L Chicken stock
- 150ml Double cream
Cooking Method
- The Architect Sauté leeks and onion in butter until soft and sweet—do not brown.
- The Bloom Add white pepper and potatoes with a 30ml splash of stock; fry for 2 minutes to release the sharp aromatics.
- The Swell Add remaining stock; simmer for 15 minutes until potatoes are soft.
- The Silk Merge Blitz until completely smooth; stir in the cream to form a heavy white silk.
- The Final Flourish Serve hot or cold; top with raw fresh chives and a drizzle of raw olive oil.
