THE LEEK-SILK CRUST
(Our Play on Greek Prasopita / Leek Pie)

- 200g Feta (crumbled)
- 3 Eggs
- 50g Butter
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
- 1 tsp Salt
- 6 sheets Phyllo pastry
Cooking Method
- The Scorch Fry leeks in butter until they are soft and charred at the edges.
- The Bloom Add spices with a tiny 15ml splash of milk; the steam will release the woody nutmeg perfume.
- The Silk Merge Whisk eggs and feta; fold in the warm leeks until it forms a thick, chunky silk.
- The Build Layer phyllo with butter in a dish; fill with leek-silk. Bake at 190°C for 30 minutes.
- The Final Flourish Top with raw fresh dill and extra black pepper.
