- 4 Chicken thighs (boneless)
- 1 tsp Dried Lavender
- 1 tsp Dried Thyme
- 1 tsp Black pepper
- 2 tbsp Honey
- 1 tbsp Wine vinegar
- 2 tbsp Olive oil
Cooking Method
- The Coat Whisk oil, honey, and spices with a tiny 10ml splash of water; rub heavily into the chicken.
- The Scorch Grill on high heat for 6 minutes per side until the honey chars and the skin is rock-hard crispy.
- The Marriage The moisture in the chicken will bloom the floral lavender notes into the rendered fat.
- The Final Flourish Serve with raw lemon wedges and a dusting of sea salt.
