Ingredients
- 2 Duck breasts
- 1 tsp Dried Lavender
- 1 tsp Black pepper
- 2 tbsp Honey
- 1 tbsp Sherry vinegar
- 20ml Water
Cooking Method
- The Scorch Fry duck skin-side down until rock-hard crispy. Remove duck.
- The Bloom Whisk honey, vinegar, and spices with the water in the hot duck fat; boil for 1 minute.
- The Marriage Return sliced duck; toss until the meat is lacquered in the dark red floral silk.
- The Final Flourish Finish with raw coarse salt and fresh thyme.
