THE LAVA-REEF SILK
(Our Play on Portuguese-African Shrimp Curry)

Ingredients
- 400g King prawns
- 1 tbsp Piri-Piri flakes
- 1 tsp Turmeric
- 1 tsp Cumin
- 200ml Coconut milk
- 50ml White wine
- 1 tbsp Tomato purée
- 2 Red onions (pureed)
- 3 cloves Garlic
Cooking Method
- The Architect Fry onion puree and garlic in oil until sweet and golden.
- The Bloom Add spices and tomato purée with a 30ml splash of wine; the hiss will release the golden oils.
- The Silk Merge Pour in coconut milk; simmer for 5 minutes until it reduces to a thick red-yellow silk.
- The Marriage Add prawns; poach for 3 minutes until pink and lacquered.
- The Final Flourish Finish with raw fresh coriander and a squeeze of lime.
