Ingredients: 400g King prawns, 1 tbsp Piri-Piri flakes, 1 tsp Turmeric, 1 tsp Cumin, 200ml Coconut milk, 50ml White wine, 1 tbsp Tomato purée, 2 Red onions (pureed), 3 cloves Garlic...

Ingredients

  • 400g King prawns
  • 1 tbsp Piri-Piri flakes
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 200ml Coconut milk
  • 50ml White wine
  • 1 tbsp Tomato purée
  • 2 Red onions (pureed)
  • 3 cloves Garlic

Cooking Method

  1. The Architect Fry onion puree and garlic in oil until sweet and golden.
  2. The Bloom Add spices and tomato purée with a 30ml splash of wine; the hiss will release the golden oils.
  3. The Silk Merge Pour in coconut milk; simmer for 5 minutes until it reduces to a thick red-yellow silk.
  4. The Marriage Add prawns; poach for 3 minutes until pink and lacquered.
  5. The Final Flourish Finish with raw fresh coriander and a squeeze of lime.
