THE LAVA-FOLD ALAMBRE
(Our Play on Beef Alambre with Peppers and Cheese)
Ingredients: 400g Beef sirloin (strips), 100g Bacon (diced), 1 Large onion (petals), 2 Bell peppers (strips), 1 tsp Smoked paprika, 1 tsp Cumin, 1 tsp Garlic powder, 150g Mozzarella or Oaxaca cheese (grated)...

- 400g Beef sirloin (strips)
- 100g Bacon (diced)
- 1 Large onion (petals)
- 2 Bell peppers (strips)
- 1 tsp Smoked paprika
- 1 tsp Cumin
- 1 tsp Garlic powder
- 150g Mozzarella or Oaxaca cheese (grated)
Cooking Method
- The Scorch Fry bacon in a wide pan until the fat renders and it turns rock-hard crispy; remove.
- The Sear In the same pan, sear beef and onion petals on maximum heat until charred and browned.
- The Bloom Add peppers and spices with a 30ml splash of water; the steam will release the smoky oils and soften the peppers.
- The Marriage Return bacon; top the entire pan with a thick layer of cheese. Cover for 2 minutes until it forms a molten lava.
- The Final Flourish Serve immediately from the pan with warm tortillas and fresh lime.
