(Our Play on Queso Fundido with Chorizo)

Ingredients
- 200g Chorizo (crumbled)
- 250g Monterey Jack or Mozzarella (grated)
- 1 small red onion (diced)
- 1 Jalapeño (minced)
- 1 tsp Smoked paprika
- 0.5 tsp Cumin
Cooking Method
- The Scorch Fry chorizo in a small skillet until the fat renders and the meat is rock-hard crispy.
- The Architect Add onions and jalapeño; sauté in the red fat until soft.
- The Bloom Add spices with a tiny 15ml splash of water to form a dark, smoky oil.
- The Marriage Top with the grated cheese; bake or grill until it turns into a bubbling, charred lava.
- The Final Flourish Finish with raw fresh coriander and serve with warm tortillas.
