THE LAVA-CHEESE REEF
(Our Play on Shrimp Queso Dip)

- 200g Small prawns
- 200g Cream cheese
- 100g Cheddar (grated)
- 50ml Milk
- 1 tsp Chili powder
- 1 tsp Garlic powder
- 1 Jalapeño (minced)
- 1 small onion (minced)
Cooking Method
- The Scorch Fry prawns and jalapeño in 1 tbsp butter until the prawns turn pink; remove.
- The Architect Sauté onion in the same pan until soft and sweet.
- The Bloom Add spices with a tiny 15ml splash of milk; the heat will swell the chili oils.
- The Silk Merge Add cream cheese, remaining milk, and cheddar; whisk until it forms a thick, molten lava.
- The Marriage Fold the prawns back into the cheese-silk.
- The Final Flourish Top with raw diced tomatoes and fresh coriander.
