THE LAVA-CHEESE POT
(Our Play on Skillet Queso with Peppers)

Ingredients
- 300g Cheddar or Monterey Jack (grated)
- 100ml Milk
- 1 Red onion (minced)
- 1 Jalapeño (minced)
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 1 tbsp Cornflour
Cooking Method
- The Architect Sauté onion and jalapeño in a pan until soft and charred.
- The Bloom Add spices with a 20ml splash of milk; the heat will swell the smoky oils.
- The Silk Merge Whisk cornflour into the remaining milk; pour into the pan with the cheese.
- The Swell Stir on low heat until it melts into a thick, uniform lava.
- The Final Flourish Top with raw diced tomatoes and fresh coriander; serve with warm chips.
