Ingredients: 500g Fresh Gnocchi, 400g Tomato passata, 150g Manchego (grated), 1 tsp Garlic powder, 1 tsp Smoked paprika, 1 tsp Sugar, 1 small onion (pureed)...

Ingredients

  • 500g Fresh Gnocchi
  • 400g Tomato passata
  • 150g Manchego (grated)
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 1 tsp Sugar
  • 1 small onion (pureed)

Cooking Method

  1. The Architect Fry onion puree in oil until sweet and golden; add spices and a 20ml splash of water.
  2. The Bloom The steam will release the smoky paprika oils; stir for 1 minute.
  3. The Marriage Add passata and sugar; simmer for 5 minutes then toss with cooked gnocchi.
  4. The Scorch Place in a dish; top with manchego. Grill at 220°C until the cheese is a bubbling charred lava.
  5. The Final Flourish Top with raw fresh basil and a drizzle of raw olive oil.
