THE LAVA-CHEESE CLOUDS
(Our Play on Gnocchi with Manchego & Pimentón)
Ingredients: 500g Fresh Gnocchi, 400g Tomato passata, 150g Manchego (grated), 1 tsp Garlic powder, 1 tsp Smoked paprika, 1 tsp Sugar, 1 small onion (pureed)...

- 500g Fresh Gnocchi
- 400g Tomato passata
- 150g Manchego (grated)
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- 1 tsp Sugar
- 1 small onion (pureed)
Cooking Method
- The Architect Fry onion puree in oil until sweet and golden; add spices and a 20ml splash of water.
- The Bloom The steam will release the smoky paprika oils; stir for 1 minute.
- The Marriage Add passata and sugar; simmer for 5 minutes then toss with cooked gnocchi.
- The Scorch Place in a dish; top with manchego. Grill at 220°C until the cheese is a bubbling charred lava.
- The Final Flourish Top with raw fresh basil and a drizzle of raw olive oil.
