- 500g Fresh Gnocchi
- 400g Tomato passata
- 125g Buffalo Mozzarella (torn)
- 1 tsp Garlic powder
- 1 tsp Sugar
- 1 tsp Dried Basil
- 1 small onion (pureed)
- 20g Parmesan
Cooking Method
- The Architect Fry onion puree in oil until sweet and golden; add spices and a 20ml splash of water.
- The Bloom The steam will release the dried herb oils; stir for 1 minute.
- The Marriage Add passata and sugar; simmer for 5 minutes then toss with cooked gnocchi.
- The Scorch Place in a dish; top with mozzarella and parmesan. Grill at 220°C until the cheese is a bubbling charred lava.
- The Final Flourish Top with raw fresh basil and a drizzle of raw olive oil.
