THE KAJMAK-FIRE SLABS
(Our Play on Serbian Pljeskavica with a Chili Twist)

Ingredients
- 500g Beef and Pork mince mix
- 100g Kajmak or Cream cheese
- 1 small onion (pureed)
- 1 tbsp Chili flakes
- 1 tsp Smoked paprika
- 1 tsp Salt
- 2 tbsp Sparkling water
- 50ml Sunflower oil
Cooking Method
- The Build Knead meat with onion puree and dry spices; fold in sparkling water to bloom the paprika.
- The Shape Form into two large, very thin patties. Spread kajmak in the center of one; top with the other and seal edges.
- The Scorch Grill on white-hot heat for 5 minutes per side until charred and the center is a molten white silk.
- The Final Flourish Serve with raw Ajvar and raw white onion rings.
