Ingredients: 500g Beef and Pork mince mix, 100g Kajmak or Cream cheese, 1 small onion (pureed), 1 tbsp Chili flakes, 1 tsp Smoked paprika, 1 tsp Salt, 2 tbsp Sparkling water, 50ml Sunflower oil...

Ingredients

  • 500g Beef and Pork mince mix
  • 100g Kajmak or Cream cheese
  • 1 small onion (pureed)
  • 1 tbsp Chili flakes
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 2 tbsp Sparkling water
  • 50ml Sunflower oil

Cooking Method

  1. The Build Knead meat with onion puree and dry spices; fold in sparkling water to bloom the paprika.
  2. The Shape Form into two large, very thin patties. Spread kajmak in the center of one; top with the other and seal edges.
  3. The Scorch Grill on white-hot heat for 5 minutes per side until charred and the center is a molten white silk.
  4. The Final Flourish Serve with raw Ajvar and raw white onion rings.
