THE JUNIPER HUNT SWELL

Ingredients: 1kg Venison or Beef chuck (cubed), 2 Red onions (pureed), 4 cloves Garlic, 2 Bay leaves, 1 tbsp Juniper berries (crushed), 1 tsp Black pepper, 1 tsp Salt, 500ml Red Wine, 100ml Gin, 1 tbsp Tomato purée...

Ingredients

  • 1kg Venison or Beef chuck (cubed)
  • 2 Red onions (pureed)
  • 4 cloves Garlic
  • 2 Bay leaves
  • 1 tbsp Juniper berries (crushed)
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 500ml Red Wine
  • 100ml Gin
  • 1 tbsp Tomato purée

Cooking Method

  1. The Scorch Sear meat on maximum heat until dark, charred mahogany blocks; remove.
  2. The Architect Fry onion and garlic in the fat until sweet and dark.
  3. The Bloom Add spices and bay leaves with a 30ml splash of gin; the steam will release the alpine perfume.
  4. The Swell Add wine, tomato purée, and remaining gin; return meat. Simmer covered for 80 minutes until melting.
  5. The Final Flourish Top with raw fresh rosemary matchsticks and a rain of raw black pepper.
