THE JUNIPER HUNT SWELL
(Our Play on Balkan Game Stew with a Gin Sting)
Ingredients: 1kg Venison or Beef chuck (cubed), 2 Red onions (pureed), 4 cloves Garlic, 2 Bay leaves, 1 tbsp Juniper berries (crushed), 1 tsp Black pepper, 1 tsp Salt, 500ml Red Wine, 100ml Gin, 1 tbsp Tomato purée...
Ingredients
- 1kg Venison or Beef chuck (cubed)
- 2 Red onions (pureed)
- 4 cloves Garlic
- 2 Bay leaves
- 1 tbsp Juniper berries (crushed)
- 1 tsp Black pepper
- 1 tsp Salt
- 500ml Red Wine
- 100ml Gin
- 1 tbsp Tomato purée
Cooking Method
- The Scorch Sear meat on maximum heat until dark, charred mahogany blocks; remove.
- The Architect Fry onion and garlic in the fat until sweet and dark.
- The Bloom Add spices and bay leaves with a 30ml splash of gin; the steam will release the alpine perfume.
- The Swell Add wine, tomato purée, and remaining gin; return meat. Simmer covered for 80 minutes until melting.
- The Final Flourish Top with raw fresh rosemary matchsticks and a rain of raw black pepper.
