Ingredients
- 400g Okra (thinly sliced into rounds)
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Amchur (Mango powder)
- 3 tbsp Oil
- 1 tsp Cumin seeds
Cooking Method
- The Scorch Heat oil until shimmering; fry okra on high heat in batches until it loses its stickiness and turns crispy.
- The Bloom Add cumin seeds and spices with a tiny 15ml splash of water; this ensures the spices 'grip' the okra without making it mushy.
- The Marriage Toss vigorously for 2 minutes until every piece is stained red and yellow.
- The Final Flourish Finish with a squeeze of lime and a handful of fresh coriander.
