- 500g Chicken breast (chunks)
- 2 Onions (pureed)
- 50g Butter
- 1 tsp Turmeric
- 1 tsp Garam masala
- 1 tsp Chili powder
- 200g Tomato passata
- 100g Greek yogurt
Cooking Method
- The Architect Fry onion puree in butter until dark and jammy.
- The Bloom Add spices and a splash of water; fry for 2 minutes.
- The Simmer Add chicken and tomato passata; simmer for 10 minutes.
- The Silk Stir in yogurt on low heat; simmer until sauce is thick and oily.
- The Final Flourish Garnish with a rub of dried fenugreek leaves.
