THE HONEY-WALNUT GRAINS
(Our Play on Semolina Halva with Baklava Spices)
Ingredients: 200g Semolina, 100g Butter, 100g Walnuts (halves), 1 tsp Cinnamon, 0.5 tsp Cloves, 1 tsp Vanilla, 400ml Water, 200g Sugar, 2 tbsp Honey...

- 100g Butter
- 100g Walnuts (halves)
- 1 tsp Cinnamon
- 0.5 tsp Cloves
- 1 tsp Vanilla
- 400ml Water
- 200g Sugar
- 2 tbsp Honey
Cooking Method
- The Swell Boil water, sugar, and honey for 5 minutes until it forms a thin baklava-syrup.
- The Architect Fry semolina and walnuts in butter until they turn a dark, toasted gold.
- The Bloom Add spices to the semolina with a tiny 20ml splash of the hot syrup; the hiss will release the perfume.
- The Marriage Slowly pour in the remaining syrup; stir constantly until the grains swell into a dense spiced silk.
- The Final Flourish Serve at room temperature with extra raw honey and cinnamon.
