THE HONEY-THYME CHEESE SLAB

Ingredients: 200g Graviera or Halloumi (thick slice), 1 tsp Dried Thyme, 1 tsp Chili flakes, 30g Flour, 50g Butter, 50ml Brandy or Ouzo...

Ingredients

  • 200g Graviera or Halloumi (thick slice)
  • 1 tsp Dried Thyme
  • 1 tsp Chili flakes
  • 30g Flour
  • 50g Butter
  • 50ml Brandy or Ouzo

Cooking Method

  1. The Coat Dip the cheese in water then dredge in flour mixed with half the spices.
  2. The Scorch Fry in butter on maximum heat until the exterior is rock-hard and charred gold.
  3. The Bloom Add brandy and remaining thyme; carefully ignite to release the herbal perfume.
  4. The Marriage Drizzle with 1 tbsp raw honey while the cheese is still bubbling.
  5. The Final Flourish Finish with a massive squeeze of raw lemon and a rain of raw black pepper.
