- 200g Graviera or Halloumi (thick slice)
- 1 tsp Dried Thyme
- 1 tsp Chili flakes
- 30g Flour
- 50g Butter
- 50ml Brandy or Ouzo
Cooking Method
- The Coat Dip the cheese in water then dredge in flour mixed with half the spices.
- The Scorch Fry in butter on maximum heat until the exterior is rock-hard and charred gold.
- The Bloom Add brandy and remaining thyme; carefully ignite to release the herbal perfume.
- The Marriage Drizzle with 1 tbsp raw honey while the cheese is still bubbling.
- The Final Flourish Finish with a massive squeeze of raw lemon and a rain of raw black pepper.
