THE HONEY-STEEPED PEARS

Ingredients: 4 Pears (peeled and cored), 500ml Red wine or Grape juice, 100g Sugar, 2 tbsp Honey, 1 Cinnamon stick, 3 Cloves, 1 Star anise...

Ingredients

  • 4 Pears (peeled and cored)
  • 500ml Red wine or Grape juice
  • 100g Sugar
  • 2 tbsp Honey
  • 1 Cinnamon stick
  • 3 Cloves
  • 1 Star anise

Cooking Method

  1. The Swell Bring wine, sugar, honey, and spices to a boil in a narrow pot.
  2. The Bloom Simmer the liquid for 5 minutes to bloom the spices before adding the fruit.
  3. The Marriage Place pears in the liquid; simmer for 20 minutes until they are stained dark red and soft.
  4. The Reduction Remove pears; boil the liquid until it reduces to a thick, spicy syrup.
  5. The Final Flourish Pour the hot syrup over the pears and serve with a dollop of raw mascarpone.
