THE HONEY-STEEPED PEARS
(Our Play on Italian Poached Pears)
Ingredients: 4 Pears (peeled and cored), 500ml Red wine or Grape juice, 100g Sugar, 2 tbsp Honey, 1 Cinnamon stick, 3 Cloves, 1 Star anise...

- 4 Pears (peeled and cored)
- 500ml Red wine or Grape juice
- 100g Sugar
- 2 tbsp Honey
- 1 Cinnamon stick
- 3 Cloves
- 1 Star anise
Cooking Method
- The Swell Bring wine, sugar, honey, and spices to a boil in a narrow pot.
- The Bloom Simmer the liquid for 5 minutes to bloom the spices before adding the fruit.
- The Marriage Place pears in the liquid; simmer for 20 minutes until they are stained dark red and soft.
- The Reduction Remove pears; boil the liquid until it reduces to a thick, spicy syrup.
- The Final Flourish Pour the hot syrup over the pears and serve with a dollop of raw mascarpone.
