THE HONEY-HERB SLABS
(Our Play on French Pork Chops with Thyme)
Ingredients: 2 Pork chops (thick cut), 1 tsp Dried Thyme, 1 tsp Black pepper, 1 tsp Salt, 2 tbsp Honey, 1 tbsp Balsamic vinegar, 50g Butter, 3 cloves Garlic (crushed)...

- 2 Pork chops (thick cut)
- 1 tsp Dried Thyme
- 1 tsp Black pepper
- 1 tsp Salt
- 2 tbsp Honey
- 1 tbsp Balsamic vinegar
- 50g Butter
- 3 cloves Garlic (crushed)
Cooking Method
- The Scorch Fry pork chops in butter until the fat renders and edges are charred; remove.
- The Architect Sauté garlic in the pork fat until deep golden brown.
- The Bloom Add thyme and pepper with a 20ml splash of water to release the herbal perfume.
- The Marriage Add honey and vinegar; return pork and simmer for 3 minutes until lacquered.
- The Final Flourish Top with a massive hit of raw fresh rosemary and salt.
