THE HONEY-FIRE RIBS

Ingredients: 600g Pork spare ribs (individual), 3 tbsp Honey, 2 tbsp Soy sauce, 1 tbsp Chili flakes, 6 cloves Garlic (crushed), 1 tbsp Ginger paste...

Ingredients

  • 600g Pork spare ribs (individual)
  • 3 tbsp Honey
  • 2 tbsp Soy sauce
  • 1 tbsp Chili flakes
  • 6 cloves Garlic (crushed)
  • 1 tbsp Ginger paste

Cooking Method

  1. The Par-Boil Boil ribs in water for 15 minutes to tenderize; drain and dry.
  2. The Architect Fry garlic and ginger in oil until deep golden.
  3. The Bloom Add honey, soy, and chili with a 40ml splash of water; boil until it form a sticky red syrup.
  4. The Scorch Toss the ribs in the syrup; grill at 200°C for 15 minutes until blackened and sticky.
  5. The Finish Top with sesame seeds and fresh coriander.
