THE HONEY-FIG CRUST
(Our Play on Balkan Spiced Fruit Tart)

- 6 Fresh Figs (halved)
- 100g Walnuts (crushed)
- 1 tsp Cinnamon
- 0.5 tsp Cardamom
- 1 tsp Vanilla
- 2 tbsp Honey
- 50g Butter (melted)
Cooking Method
- The Bloom Whisk honey, melted butter, and spices with a tiny 5ml splash of warm water to release the perfume.
- The Build Arrange figs on the pastry; paint heavily with the spiced honey silk.
- The Scorch Top with walnuts; roast at 200°C for 25 minutes until the figs are charred and pastry is golden.
- The Final Flourish Finish with raw orange zest and a dollop of cold raw Greek yogurt.
