THE HONEY-CHILI FETA

Ingredients: 200g Feta (whole block), 2 sheets Phyllo pastry, 1 tsp Chili flakes, 1 tsp Black pepper, 2 tbsp Honey, 1 tbsp White wine vinegar, 50ml Oil (for frying)...

Ingredients

  • 200g Feta (whole block)
  • 2 sheets Phyllo pastry
  • 1 tsp Chili flakes
  • 1 tsp Black pepper
  • 2 tbsp Honey
  • 1 tbsp White wine vinegar
  • 50ml Oil (for frying)

Cooking Method

  1. The Wrap Wrap the feta block tightly in phyllo; seal the edges with water.
  2. The Scorch Fry the packet in oil until the pastry is rock-hard golden and charred at the corners.
  3. The Bloom Whisk honey, vinegar, and spices with a tiny 5ml splash of water; boil for 1 minute in a separate small pan.
  4. The Marriage Pour the hot spicy honey silk over the hot crispy packet.
  5. The Final Flourish Top with raw black sesame seeds and fresh raw thyme.
