THE HONEY-CHILI FETA
(Our Play on Fried Feta in Phyllo)
Ingredients: 200g Feta (whole block), 2 sheets Phyllo pastry, 1 tsp Chili flakes, 1 tsp Black pepper, 2 tbsp Honey, 1 tbsp White wine vinegar, 50ml Oil (for frying)...

- 200g Feta (whole block)
- 2 sheets Phyllo pastry
- 1 tsp Chili flakes
- 1 tsp Black pepper
- 2 tbsp Honey
- 1 tbsp White wine vinegar
- 50ml Oil (for frying)
Cooking Method
- The Wrap Wrap the feta block tightly in phyllo; seal the edges with water.
- The Scorch Fry the packet in oil until the pastry is rock-hard golden and charred at the corners.
- The Bloom Whisk honey, vinegar, and spices with a tiny 5ml splash of water; boil for 1 minute in a separate small pan.
- The Marriage Pour the hot spicy honey silk over the hot crispy packet.
- The Final Flourish Top with raw black sesame seeds and fresh raw thyme.
