THE HONEY-CHARRED CHEESE
(Our Play on Serbian Fried Cheese / Pohovani Sir)

Ingredients
- 200g Kashkaval or Gruyère (thick slices)
- 1 tsp Chili flakes
- 1 tsp Dried Oregano
- 1 Egg
- 50g Breadcrumbs
- Oil for frying
- 2 tbsp Honey
- 1 tbsp Wine vinegar
Cooking Method
- The Coat Dredge cheese in flour, then egg, then breadcrumbs mixed with the spices.
- The Scorch Flash-fry in hot oil for 45 seconds per side until rock-hard golden.
- The Bloom Whisk honey and vinegar in a small bowl with a tiny 5ml splash of water; the moisture will bloom the honey perfume.
- The Marriage Drizzle the hot honey-silk over the screaming hot cheese.
- The Final Flourish Top with a dusting of raw black pepper and extra raw oregano.
