THE HONEY-CHARRED CHEESE

Ingredients: 200g Kashkaval or Gruyère (thick slices), 1 tsp Chili flakes, 1 tsp Dried Oregano, 1 Egg, 50g Breadcrumbs, Oil for frying, 2 tbsp Honey, 1 tbsp Wine vinegar...

Ingredients

  • 200g Kashkaval or Gruyère (thick slices)
  • 1 tsp Chili flakes
  • 1 tsp Dried Oregano
  • 1 Egg
  • 50g Breadcrumbs
  • Oil for frying
  • 2 tbsp Honey
  • 1 tbsp Wine vinegar

Cooking Method

  1. The Coat Dredge cheese in flour, then egg, then breadcrumbs mixed with the spices.
  2. The Scorch Flash-fry in hot oil for 45 seconds per side until rock-hard golden.
  3. The Bloom Whisk honey and vinegar in a small bowl with a tiny 5ml splash of water; the moisture will bloom the honey perfume.
  4. The Marriage Drizzle the hot honey-silk over the screaming hot cheese.
  5. The Final Flourish Top with a dusting of raw black pepper and extra raw oregano.
