Ingredients
- 600g Diced Lamb (2cm chunks)
- 1 Cinnamon stick
- 3 Cardamom pods
- 1 tbsp Ginger paste
- 1.5 tsp Chili powder
- 1 tsp Turmeric
- 2 tsp Coriander powder
- 150g Greek yogurt (full fat)
- 100ml Water
Cooking Method
- The Temper Infuse the oil with the cinnamon and cardamom until fragrant.
- The Sear Add the lamb and ginger paste; sear on high heat until the meat is browned on all sides.
- The Bloom Stir in the spices and a splash of water to form a thick, dark masala.
- The Slow Merge Stir in the yogurt one tablespoon at a time; simmer low for 30 minutes until the meat is tender.
- The Finish Finish with a dusting of Garam Masala and fresh ginger matchsticks.
