Ingredients: 4 Fresh Mackerel fillets, 1 tbsp Dried Oregano, 1 tsp Black pepper, 1 tsp Salt, 50ml Extra virgin olive oil, 1 Lemon (juiced), 2 cloves Garlic (minced)...

Ingredients

  • 4 Fresh Mackerel fillets
  • 1 tbsp Dried Oregano
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 50ml Extra virgin olive oil
  • 1 Lemon (juiced)
  • 2 cloves Garlic (minced)

Cooking Method

  1. The Coat Score the mackerel skin; rub with oil, garlic, and dry spices.
  2. The Bloom Add a tiny 10ml splash of water to the herb rub; the moisture will ensure the oregano oils penetrate the scores.
  3. The Scorch Roast at 200°C for 12 minutes until the skin is blackened and charred.
  4. The Marriage Drizzle with lemon juice immediately after removing from the oven.
  5. The Final Flourish Finish with a hit of raw extra virgin olive oil and fresh raw parsley.
