THE HERB-CHARRED LAYERS
(Our Play on Tian de Légumes / Vegetable Bake)

- 1 tbsp Herbes de Provence
- 1 tsp Garlic powder
- 1 tsp Salt
- 100ml Extra virgin olive oil
- 2 tbsp Balsamic vinegar
Cooking Method
- The Shape Arrange vegetables in tight, upright layers in a baking dish.
- The Bloom Whisk oil, vinegar, and spices with a tiny 15ml splash of water; pour over the veg.
- The Scorch Roast at 200°C for 40 minutes until the edges are rock-hard charred and the cores are soft.
- The Final Flourish Top with a massive handful of raw fresh basil and a rain of raw coarse salt.
