THE HARISSA-STUNG ORBS
(Our Play on Romanian Mititei with North African Fire)
Ingredients: 600g Beef and Lamb mince, 1 tbsp Harissa paste, 1 tsp Cumin, 1 tsp Salt, 6 cloves Garlic (pureed), 1 tsp Baking soda, 50ml Cold Beer, 1 tbsp Honey...
Ingredients
- 600g Beef and Lamb mince
- 1 tbsp Harissa paste
- 1 tsp Cumin
- 1 tsp Salt
- 6 cloves Garlic (pureed)
- 1 tsp Baking soda
- 50ml Cold Beer
- 1 tbsp Honey
Cooking Method
- The Build Knead meat with harissa, garlic, baking soda, and cumin.
- The Bloom Slowly fold in beer and honey; the bubbles will release the piquant chili oils into the architecture.
- The Rest Chill for 12 hours.
- The Scorch Grill on maximum heat for 2 minutes per side until blackened and rock-hard charred.
- The Final Flourish Serve with raw preserved lemons and fresh raw coriander.
