(Our Play on Ćevapi with North African Fire)
Ingredients: 600g Beef and Lamb mince mix, 1 tbsp Harissa paste, 1 tsp Cumin, 1 tsp Salt, 4 cloves Garlic (minced), 1 tsp Baking soda, 50ml Cold Beer, 1 tbsp Honey...
Ingredients
- 600g Beef and Lamb mince mix
- 1 tbsp Harissa paste
- 1 tsp Cumin
- 1 tsp Salt
- 4 cloves Garlic (minced)
- 1 tsp Baking soda
- 50ml Cold Beer
- 1 tbsp Honey
Cooking Method
- The Build Knead meat with harissa, garlic, and baking soda until tacky.
- The Bloom Slowly fold in beer and honey; the bubbles will release the piquant chili oils into the fat.
- The Rest Chill for 12 hours to set the architecture.
- The Scorch Grill on white-hot heat until blackened and charred outside.
- The Final Flourish Serve with raw preserved lemons and fresh raw coriander.
