THE HARISSA CHEESE FOLD

Ingredients: 10 sheets Phyllo pastry, 100g Butter (melted), 300g Feta (crumbled), 200ml Yogurt, 3 Eggs, 1 tbsp Harissa paste, 1 tsp Smoked paprika...

Ingredients

  • 10 sheets Phyllo pastry
  • 100g Butter (melted)
  • 300g Feta (crumbled)
  • 200ml Yogurt
  • 3 Eggs
  • 1 tbsp Harissa paste
  • 1 tsp Smoked paprika

Cooking Method

  1. The Bloom Whisk eggs, yogurt, and harissa with a tiny 10ml splash of warm water to wake the chili oils.
  2. The Silk Merge Fold in the Feta and paprika until it forms a chunky, fiery orange silk.
  3. The Build Brush phyllo with butter; spread 2 tbsp of the fire-silk and roll into snakes.
  4. The Shape Coil the snakes in a round pan; bake at 200°C for 30 minutes until the top is rock-hard golden charred.
  5. The Final Flourish Brush with raw honey and top with raw black sesame seeds.
