THE HARISSA CHEESE FOLD
(Our Play on Banitsa with North African Fire)

Ingredients
- 10 sheets Phyllo pastry
- 100g Butter (melted)
- 300g Feta (crumbled)
- 200ml Yogurt
- 3 Eggs
- 1 tbsp Harissa paste
- 1 tsp Smoked paprika
Cooking Method
- The Bloom Whisk eggs, yogurt, and harissa with a tiny 10ml splash of warm water to wake the chili oils.
- The Silk Merge Fold in the Feta and paprika until it forms a chunky, fiery orange silk.
- The Build Brush phyllo with butter; spread 2 tbsp of the fire-silk and roll into snakes.
- The Shape Coil the snakes in a round pan; bake at 200°C for 30 minutes until the top is rock-hard golden charred.
- The Final Flourish Brush with raw honey and top with raw black sesame seeds.
