THE GUAJILLO-REEF LACQUER
(Our Play on Guajillo Chili Prawns)
Ingredients: 400g King prawns, 4 Dried Guajillo chilies (sliced into rings), 1 tsp Salt, 4 cloves Garlic (minced), 3 tbsp Olive oil, 2 tbsp Lime juice, 1 tbsp Honey...
Ingredients
- 400g King prawns
- 4 Dried Guajillo chilies (sliced into rings)
- 1 tsp Salt
- 4 cloves Garlic (minced)
- 3 tbsp Olive oil
- 2 tbsp Lime juice
- 1 tbsp Honey
Cooking Method
- The Scorch Heat oil in a wide pan; fry the guajillo rings for 30 seconds until they turn dark red; remove.
- The Architect In the same oil, fry garlic until pale golden and fragrant.
- The Bloom Add salt and a 20ml splash of lime juice to the pan; the steam will release the garlic oils.
- The Marriage Add prawns and guajillo rings; toss on high heat for 3 minutes until prawns are pink and lacquered.
- The Final Flourish Finish with honey and a massive hit of raw fresh coriander.
