Ingredients: 400g King prawns, 400g Tomatillos (or green tomatoes), 2 Green chilies, 1 tsp Garlic powder, 1 tsp Cumin, 50ml Chicken stock, 1 Lime (juiced)...

Ingredients

  • 400g King prawns
  • 400g Tomatillos (or green tomatoes)
  • 2 Green chilies
  • 1 tsp Garlic powder
  • 1 tsp Cumin
  • 50ml Chicken stock
  • 1 Lime (juiced)

Cooking Method

  1. The Scorch Grill tomatillos and chilies until blackened; blitz to a rough puree.
  2. The Bloom Fry the green puree with garlic and cumin; add a 20ml splash of stock to release the oils.
  3. The Marriage Add prawns; simmer in the green silk for 4 minutes until they turn pink.
  4. The Final Flourish Add a massive handful of raw fresh coriander and lime right before serving.
