THE GREEN-SWELL REEF
(Our Play on Prawns in Salsa Verde)

- 400g King prawns
- 400g Tomatillos (or green tomatoes)
- 2 Green chilies
- 1 tsp Garlic powder
- 1 tsp Cumin
- 50ml Chicken stock
- 1 Lime (juiced)
Cooking Method
- The Scorch Grill tomatillos and chilies until blackened; blitz to a rough puree.
- The Bloom Fry the green puree with garlic and cumin; add a 20ml splash of stock to release the oils.
- The Marriage Add prawns; simmer in the green silk for 4 minutes until they turn pink.
- The Final Flourish Add a massive handful of raw fresh coriander and lime right before serving.
