THE GREEN-SWELL POULTRY POT

- 600g Chicken thighs (shredded)
- 400g Tomatillos
- 2 Poblano peppers
- 2 cloves Garlic
- 1 tsp Cumin
- 1 tsp Dried Oregano
- 1L Chicken stock
- 400g White Hominy (canned)
Cooking Method
- The Scorch Grill tomatillos and poblanos until the skins are blackened; blitz into a green puree.
- The Bloom Fry the green puree with spices; add a 40ml splash of stock to release the herbal oils.
- The Swell Add remaining stock, hominy, and chicken; simmer for 25 minutes until the soup is thick and vibrant.
- The Marriage Shred the chicken back into the green silk.
- The Final Flourish Serve with raw radish slices, lime, and dried oregano.
