THE GREEN-SWELL POULTRY POT

Ingredients: 600g Chicken thighs (shredded), 400g Tomatillos, 2 Poblano peppers, 2 cloves Garlic, 1 tsp Cumin, 1 tsp Dried Oregano, 1L Chicken stock, 400g White Hominy (canned)...

Ingredients

  • 600g Chicken thighs (shredded)
  • 400g Tomatillos
  • 2 Poblano peppers
  • 2 cloves Garlic
  • 1 tsp Cumin
  • 1 tsp Dried Oregano
  • 1L Chicken stock
  • 400g White Hominy (canned)

Cooking Method

  1. The Scorch Grill tomatillos and poblanos until the skins are blackened; blitz into a green puree.
  2. The Bloom Fry the green puree with spices; add a 40ml splash of stock to release the herbal oils.
  3. The Swell Add remaining stock, hominy, and chicken; simmer for 25 minutes until the soup is thick and vibrant.
  4. The Marriage Shred the chicken back into the green silk.
  5. The Final Flourish Serve with raw radish slices, lime, and dried oregano.
