THE GREEN-SILK TANGLE
(Our Play on Salsa Verde - DNA style)

- 500g Tomatillos (halved)
- 2 Jalapeños
- 1 Onion (quartered)
- 3 cloves Garlic
- 1 tsp Cumin seeds
- 1 tsp Salt
- Handful of fresh Coriander
- 1 Lime (juiced)
Cooking Method
- The Scorch Grill tomatillos, jalapeños, onion, and garlic until charred and soft.
- The Bloom Blitz the veg with cumin and a tiny 15ml splash of water; the heat of the veg will bloom the cumin.
- The Swell Fry the puree in 1 tbsp oil for 5 minutes to deepen the green silk.
- The Marriage Stir in lime juice off the heat.
- The Final Flourish Top with a massive hit of raw fresh coriander.
