THE GREEN-SILK FIN
(Our Play on Fish in Cilantro Sauce)

Ingredients
- 2 White fish fillets (Snapper or Cod)
- 100g Fresh Coriander
- 1 Jalapeño
- 2 cloves Garlic
- 100ml Double cream
- 50ml Chicken stock
- 1 tsp Cumin
- 1 tsp Salt
Cooking Method
- The Scorch Sear fish in a hot oiled pan for 3 minutes per side until charred; remove.
- The Architect Blitz coriander, jalapeño, and garlic into a rough green pulp.
- The Bloom Fry the green pulp with cumin; add a 20ml splash of stock to release the herbal perfume.
- The Silk Merge Pour in the cream and remaining stock; simmer for 3 minutes until it forms a thick emerald silk.
- The Marriage Return the fish to the pan for 1 minute to lacquer in the green fire.
- The Final Flourish Finish with raw lime zest and a hit of fresh black pepper.
