THE GREEN-LACQUER REEF
(Our Play on Salsa Verde Prawns)

Ingredients
- 400g King prawns
- 400g Tomatillos
- 2 Jalapeños
- 3 cloves Garlic
- 1 tsp Cumin
- 1 tsp Salt
- 100ml Chicken stock
- 1 tbsp Honey
Cooking Method
- The Scorch Roast tomatillos and jalapeños until blackened; blitz with garlic and cumin.
- The Bloom Fry the green puree in 1 tbsp oil; add a 25ml splash of stock to release the oils.
- The Marriage Add prawns and honey; simmer in the green silk for 4 minutes until they turn pink and lacquered.
- The Final Flourish Add a massive handful of raw fresh coriander and extra lime zest.
