THE GREEN-HEAT PRAWNS
(Our Play on Prawn Pepper Masala)

Ingredients
- 400g King prawns (cleaned)
- 2 tsp Black pepper (crushed)
- 2 Green chilies (slit)
- 1 tsp Turmeric
- 1 tsp Garam masala
- 2 Red onions (finely diced)
- 1 tbsp Ginger-garlic paste
Cooking Method
- The Architect Fry onions in 2 tbsp oil until they are dark, sweet, and caramelized.
- The Bloom Add the spices and a 20ml splash of water to form a dark, peppery paste.
- The Marriage Toss in the prawns; stir-fry on high heat for 4 minutes until they are pink and dry.
- The Final Flourish Garnish with fresh curry leaves and a squeeze of lime.
