  • 500g Chicken breast (chunks)
  • 100g Spinach
  • 50g Mint
  • 50g Coriander (blitzed with 100ml coconut milk)
  • 1 tsp Turmeric
  • 1 tsp Cumin powder
  • 1 tsp Black pepper

Cooking Method

  1. The Architect Sauté diced onions until golden brown; add spices and a splash of water.
  2. The Sear Add chicken chunks; fry for 5 minutes until sealed and glistening.
  3. The Marriage Pour in the green silk-coconut mix; simmer for 10 minutes until the sauce is thick and vibrant green.
  4. The Final Flourish Finish with a squeeze of fresh lime juice.
