THE GREEN-FOLD MEDLEY
(Our Play on Methi Paneer / Fenugreek Cottage Cheese)
Ingredients: 300g Paneer (cubed), 100g Fresh Fenugreek leaves (Methi) or 2 tbsp Dried, 1 Large onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Cumin powder, 1 tsp Garam masala...
Ingredients
- 300g Paneer (cubed)
- 100g Fresh Fenugreek leaves (Methi) or 2 tbsp Dried
- 1 Large onion (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Cumin powder
- 1 tsp Garam masala
Cooking Method
- The Scorch Fry paneer cubes in oil until the edges are golden; set aside.
- The Architect Sauté onions until deep golden brown; don't rush the sugars.
- The Bloom Add spices and a 20ml splash of water to form a fragrant, thick paste.
- The Wilt Toss in the fenugreek and paneer; stir-fry for 5 minutes until the greens coat the cheese.
- The Final Flourish Finish with a squeeze of lemon and a pinch of chili flakes.
