Ingredients: 300g Paneer (cubed), 100g Fresh Fenugreek leaves (Methi) or 2 tbsp Dried, 1 Large onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Cumin powder, 1 tsp Garam masala...

Ingredients

  • 300g Paneer (cubed)
  • 100g Fresh Fenugreek leaves (Methi) or 2 tbsp Dried
  • 1 Large onion (finely diced)
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 1 tsp Cumin powder
  • 1 tsp Garam masala

Cooking Method

  1. The Scorch Fry paneer cubes in oil until the edges are golden; set aside.
  2. The Architect Sauté onions until deep golden brown; don't rush the sugars.
  3. The Bloom Add spices and a 20ml splash of water to form a fragrant, thick paste.
  4. The Wilt Toss in the fenugreek and paneer; stir-fry for 5 minutes until the greens coat the cheese.
  5. The Final Flourish Finish with a squeeze of lemon and a pinch of chili flakes.
